Blueberry Soup (Chilled)
(This recipe makes 4 servings)
This is a very refreshing recipe. It is a great addition to your lunch or dinner on a hot day.
Ingredients:
2 Cups Blueberries (Fresh)
6 Ounces Heavy Cream
3 Ounces Sour Cream
1 Teaspoon Honey
3 Tablespoons Confectioners Sugar
1 Cup Champagne (Your Favorite) I used Moet and Chandon White Star
Procedure:
-Keep it simple! Put all of the ingredients in the blender and puree.
-Chill
(If it separates when it is being chilled, just mix it back together with a whisk.)
