    With these pistons in a 1978 360 block that has Not been decked and has stock crank, stock rods but will have 62CC iron heads with .027 Cometic head gaskets(bore 4.040) what kind of compression should I have? Sorry I do not know how to figure compression

    The compression ratio using the Sealed Power piston H405CP20 with a 63cc volume head, the head gasket spec you gave and with the piston .050" below deck your compression ratio would around 9.45 to 1.
