The thermostat sets the temperature the engine is designed to run at, and the 195 degree rating is not arbitrary: the fuel and emissions calibration assume it. Fitting a cooler thermostat to cure an overheat masks the real fault and costs fuel economy, because the engine never reaches the temperature the tune expects.
