The mass air flow sensor tells the engine controller how much air is actually entering, which is the basis for the fueling calculation. On a diesel a drifting sensor does not usually stall the engine, it just makes it smoke, lose power and fail to regenerate properly. Sensors foul rather than fail outright, so readings drift slowly.
